I have the same disk and the same issue. It is actually a tad worse since I didn't even got to closing the case. The wifi chip couldn't be put back in place once I installed the heatsink.

How necessary is the heatsink? And how do I measure the temperature of the disk while in operation?

The mSATA heat-plate is important to keep the fitlet temperature down.
You should be able to install the Wifi together with the heatplate. Your half-to-full size adapter is probably installed in wrong orientation.
If you just rotate it upside down, you'll be able to close the cover.

I've removed the wireless card. Attached to it was a heatsink kind of thing too. That I unscrewed and turned over. Now the mSATA heatsink fits! It is *very* tight, without your advice I would have never tried that. Thanks!
