I have bought a Fit PC2 off the ebay. the seller indicated that it came with a XP but I can't get it load. I can get to a page where I have the choice of loading:
Ubuntu 8.04.3 LTS, Kernal 2.6.24-34-fitpc2
Ubuntu 8.04.3 LTS, Kernal 2.6.24-34-fitpc2 (recovery mode)
Ubuntu 8.04.3 LTS, memtest86+
but no matter which I select it just carries on scrolling through what looks like BIOS text and then just stops.
Can anybody help!?

Comparing "C1600-H-XL" with the list at http://www.fit-pc.com/web/fit-pc2/fit-pc2-models/ suggests that this would not come with Windows.
Frankly, from a security POV, you need to blow away what is on the disk anyway - and take the opportunity to update the version of Linux too.
I recommend that you treat your fit-PC as if the disk were empty and install Linux from scratch. Instructions here http://www.fit-pc2.com/wiki/index.php/Linux_on_fit-PC2
What disk is in the fit-PC? (type - SSD or HDD, size) It's possible that you are stopping on the file system check, which on a big disk can take a long time.

Could just be normal Linux boot messages or could be a problem. You would have to post some of the text here e.g. the last half dozen or so lines.it just carries on scrolling through what looks like BIOS text

It's actually fairly straightforward.
The fit-PC has a compartment into which you can install a 2.5" SATA II drive, either a conventional HDD (e.g. your Hitachi 160GB) or a solid-state disk (SSD), but not both; and it has a slot for a mini-SDHC card (or, more likely, a micro-SDHC card in a micro-to-mini adapter).
